{"id":113,"date":"2017-12-03T05:38:15","date_gmt":"2017-12-03T05:38:15","guid":{"rendered":"http:\/\/www.eldervine.net\/kitchen\/?p=113"},"modified":"2017-12-27T20:03:09","modified_gmt":"2017-12-27T20:03:09","slug":"broccoli-new-potato-gribiche","status":"publish","type":"post","link":"https:\/\/www.eldervine.net\/kitchen\/recipes\/broccoli-new-potato-gribiche","title":{"rendered":"Broccoli-New Potato Gribiche"},"content":{"rendered":"<p><em>Serves 6<\/em><\/p>\n<p><em>Egg or egg-less (so not a French Sauce Gribiche)<\/em><\/p>\n<h1>Ingredients<\/h1>\n<ul>\n<li>New or Fingerling Potatoes\u00a0 ||\u00a0 1-1\/2 lbs\u00a0 || unpealed, large potatoes cut.<\/li>\n<li>Broccoli Florets\u00a0 ||\u00a0 12 oz<\/li>\n<li>Olive oil\u00a0 || 2 Tbsp<\/li>\n<li>Sea Salt\u00a0 || 2 pinches<\/li>\n<\/ul>\n<p>For &#8220;Gribiche&#8221; Sauce<\/p>\n<ul>\n<li>Extra Virgin Olive Oil\u00a0 ||\u00a0 1\/2 cup<\/li>\n<li>Red Wine Vinegar\u00a0 ||\u00a0 2 Tbsp<\/li>\n<li>Dijon Mustard\u00a0 ||\u00a0 1 tsp<\/li>\n<li>Shallot, chopped\u00a0 || 2 each<\/li>\n<li>Tofu, firm, chopped in 1\/8&#8243; cubes\u00a0 ||\u00a0 4 oz<\/li>\n<li>Paprika\u00a0 ||\u00a0 1\/4 tsp<\/li>\n<li>Capers, chopped\u00a0 ||\u00a0 1 Tbsp<\/li>\n<li>Parsley, chopped\u00a0 || 1 Tbsp<\/li>\n<li>Tarragon, chopped\u00a0 || 1 Tbsp<\/li>\n<li>Chives, chopped\u00a0 || 1 Tbsp<\/li>\n<\/ul>\n<h1>Steps<\/h1>\n<p>Roast vegetables<\/p>\n<ul>\n<li>Preheat oven to 400F.<\/li>\n<li>Toss potatoes with the olive oil and salt, spread out on a baking sheet<\/li>\n<li>Roast until cooked and starting to brown, about 30 mins.<\/li>\n<li>About 15 mins before potatoes are done, toss the broccoli in olive oil and a pinch of salt. Spread on their own baking sheet or add to the potatoes sheet (one less sheet to clean).<\/li>\n<\/ul>\n<p>Dressing<\/p>\n<ul>\n<li>Whisk Olive Oil, Mustard, Paprika. Whisk in Red Wine Vinegar.<\/li>\n<li>Add Capers, Herbs and 1\/4 of theTofu.<\/li>\n<\/ul>\n<p>Assemble<\/p>\n<ul>\n<li>Toss the warm Vegetables with about two thirds the Dressing, add additional Dressing to taste.<\/li>\n<li>Serve in a bowl or platter.<\/li>\n<\/ul>\n<h1>Notes<\/h1>\n<ul>\n<li>For the Egg version of the Gribiche sauce.\n<ul>\n<li>Substitute 4 hard boiled Eggs (rather than Tofu).<\/li>\n<li>Remove the Paprika.<\/li>\n<li>Mash the yolk of 1 of the eggs, slowly add the Olive Oil until smooth.<\/li>\n<li>Whisk in the Red Wine Vinegar, Mustard.
