{"id":97,"date":"2017-12-01T06:43:05","date_gmt":"2017-12-01T06:43:05","guid":{"rendered":"http:\/\/www.eldervine.net\/kitchen\/?p=97"},"modified":"2017-12-27T19:59:08","modified_gmt":"2017-12-27T19:59:08","slug":"spinach-and-mushroom-braid","status":"publish","type":"post","link":"http:\/\/www.eldervine.net\/kitchen\/recipes\/spinach-and-mushroom-braid","title":{"rendered":"Spinach and Mushroom Braid"},"content":{"rendered":"<p><em>A family favorite<\/em><\/p>\n<p><em>2 pastries, serves 10-12<\/em><\/p>\n<h1>Ingredients<\/h1>\n<ul>\n<li>Puff Pastry dough, defrosted || 1 lb 10 oz\u00a0 || Remove from the freezer the night before<\/li>\n<\/ul>\n<p>Filling<\/p>\n<ul>\n<li>Spinach\u00a0 ||\u00a0 2 lb\u00a0 ||\u00a0 Clean, remove any dried part of the stems<\/li>\n<li>Onion, chopped\u00a0 || 12 oz (2 cups)<\/li>\n<li>Mushrooms, sliced medium\u00a0 || 1-1\/4 lb<\/li>\n<li>&#8211;<\/li>\n<li>Cheddar Cheese, grated\u00a0 || 12 oz (3 cups)<\/li>\n<li>&#8211;<\/li>\n<li>Dijon Mustard\u00a0 || 1 Tbs<\/li>\n<li>Salt<\/li>\n<li>Black Pepper<\/li>\n<\/ul>\n<p>Wash coating<\/p>\n<ul>\n<li>Egg, beaten<\/li>\n<li>OR: Aquafaba (canned Chickpea liquid), whipped<\/li>\n<\/ul>\n<h1>Steps<\/h1>\n<ul>\n<li>Preheat the oven to 350F<\/li>\n<\/ul>\n<p>The Filling<\/p>\n<ul>\n<li>Saute the Onions until soft.<\/li>\n<li>Add the Mushrooms until both are tender.<\/li>\n<li>Add the Spinach and saute slightly (note, the Spinach will cook further in the pastry).<\/li>\n<li>Allow to cool.<\/li>\n<li>Stir in the Salt, Pepper, Dijon Mustard.<\/li>\n<li>Mix in the Cheese.<\/li>\n<\/ul>\n<p>The Braid<\/p>\n<ul>\n<li>Flour the table top lightly.<\/li>\n<li>Roll out the pastry dough, fold over, roll out again, repeat a few times. It should be a large rectangle (12 to 15 inches square) about 1\/8 inches thick.<\/li>\n<li>&#8211;<\/li>\n<li>Spoon some of the Spinach mixture down the middle of the Pastry square. Leave uncovered about 4&#8243; on either side and a few inches at the top and bottom.<\/li>\n<li>With a small knife, score strips of dough on the left and right, approx 3\/4&#8243; wide, resulting an equal number of strips on each side.<\/li>\n<li>Fold down top flap, fold up the bottom flap over the filing.<\/li>\n<li>Alternating left\/right, from one end to the other, fold a strip at an angle over the filling, cross the strip from the other side. It will look like a lace or braid.<\/li>\n<li>With a pastry brush, apply a thin wash over the pastry.<\/li>\n<li>Optionally sprinkle some Sesame Seeds.<\/li>\n<\/ul>\n<p>Bake<\/p>\n<ul>\n<li>With 2 or 3 spatulas, lift the Pastry onto a baking sheet.<\/li>\n<li>Alternatively, I&#8217;ve rolled the Pastry out on parchment paper. It&#8217;s then easy to lift the pastry onto a baking sheet.<\/li>\n<li>Bake 1 hour, or until golden brown.<\/li>\n<\/ul>\n<h1>Notes<\/h1>\n<ul>\n<li>We&#8217;ve used a wide range of fillings, be creative.
