{"id":279,"date":"2023-07-19T01:00:41","date_gmt":"2023-07-19T01:00:41","guid":{"rendered":"https:\/\/www.eldervine.net\/kitchen\/?p=279"},"modified":"2023-07-19T01:00:41","modified_gmt":"2023-07-19T01:00:41","slug":"spanish-spinach-and-chickpea","status":"publish","type":"post","link":"http:\/\/www.eldervine.net\/kitchen\/recipes\/spanish-spinach-and-chickpea","title":{"rendered":"Spanish Spinach and Chickpea"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Andalusian Spinach and Garbanzos \/ Espinacas con Garbanzos.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">Ingredients<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Base<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Chickpeas ||  2 cans (15 oz) || 1 drained, 1 with liquid<\/li>\n\n\n\n<li>Vegetable Broth ||  1-1\/2 cups<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Bread crumbs<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bread, Crusty \/ Country loaf  || 1-1\/2 oz  ||  Roughly cut the crusty bread into small pieces, larger than bread crumbs but smaller than croutons.<\/li>\n\n\n\n<li>Olive Oil  ||  1\/4 cup<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Spices<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Garlic  ||  6 cloves, minced<\/li>\n\n\n\n<li>Paprika, Smoked ||  1 Tbsp<\/li>\n\n\n\n<li>Cumin, Ground  ||  1 tsp<\/li>\n\n\n\n<li>Salt  ||  1\/4 tsp<\/li>\n\n\n\n<li>Cinnamon,Gground  ||  1\/8 tsp<\/li>\n\n\n\n<li>Cayenne Pepper  ||  1\/8 tsp<\/li>\n\n\n\n<li>Saffron  || pinch<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Other<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Tomatoes  || 3 ea small Roma or similar -seeded, grated, skin discarded; or 1 cup canned diced<\/li>\n\n\n\n<li>Sherry Vinegar  ||  1-1\/2 Tbsp<\/li>\n\n\n\n<li>&#8211;<\/li>\n\n\n\n<li>Spinach  || 12 oz fresh spinach, de-stemmed<\/li>\n\n\n\n<li>&#8211;<\/li>\n\n\n\n<li>Olive Oil  ||  2 Tbsp<\/li>\n<\/ul>\n\n\n\n<h1 class=\"wp-block-heading\">Steps<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Chickpeas &#8211; simmer<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Add Broth and Chickpeas (including the reserved Chickpea liquid from one can) to a large saucepan or dutch oven.<\/li>\n\n\n\n<li>Bring to a boil and reduce heat to simmer.<\/li>\n\n\n\n<li>Simmer until the liquid is just below the top of the Chickpeas (approx 10-12 mins).<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Bread crumbs (while Chickpeas are simmering)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Heat the Olive Oil in a medium skillet until shimmering.<\/li>\n\n\n\n<li>Add the diced bread and saute, stirring frequently, until golden brown (3-5 mins)<\/li>\n\n\n\n<li>Add the Spices, stir and cook until fragrant (approx 30 secs)<\/li>\n\n\n\n<li>Stir in the Tomatoes and Vinegar.<\/li>\n\n\n\n<li>Remove from heat.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Once the liquid in the sauce pan is just below the top of the Chickpeas<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Add the Bread crumb mixture and Spinach with the Chickpeas.<\/li>\n\n\n\n<li>Continue to simmer, stirring occasionally, until the mixture is thick with a consistency like stew (approx 5-10 mins longer).<\/li>\n\n\n\n<li>Remove from heat, stir in the 2 Tbsp of Olive Oil.<\/li>\n\n\n\n<li>Cover and let stand for 5 min.<\/li>\n<\/ul>\n\n\n\n<h1 class=\"wp-block-heading\">Serve<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Serve in a bowl over rustic bread slides. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add addition Sherry Vinegar to taste.
