{"id":209,"date":"2018-01-17T01:06:27","date_gmt":"2018-01-17T01:06:27","guid":{"rendered":"http:\/\/www.eldervine.net\/kitchen\/?p=209"},"modified":"2019-08-19T14:40:40","modified_gmt":"2019-08-19T14:40:40","slug":"muhammara-roasted-red-pepper-and-walnut-dip","status":"publish","type":"post","link":"http:\/\/www.eldervine.net\/kitchen\/recipes\/muhammara-roasted-red-pepper-and-walnut-dip","title":{"rendered":"Muhammara &#8211; Roasted Red Pepper and Walnut Dip"},"content":{"rendered":"<h1>Ingredients<\/h1>\n<ul>\n<li>Red Bell Pepper\u00a0 ||\u00a0 1 large<\/li>\n<li>Walnuts, chopped, toasted lightly\u00a0 ||\u00a0 3\/4\u00a0 cup<\/li>\n<li>Sea Salt\u00a0 ||\u00a0 1\/2 tsp<\/li>\n<li>Cumin\u00a0 ||\u00a0 1 tsp<\/li>\n<li>Red Pepper Flakes\u00a0 ||\u00a0 1 tsp<\/li>\n<li>Lemon Juice\u00a0 ||\u00a0\u00a0 3 tsp<\/li>\n<li>Olive Oil\u00a0 ||\u00a0 8 Tbs<\/li>\n<li>Grenadine\u00a0\u00a0 ||\u00a0\u00a0 4 tsp\u00a0 || Must be high-quality, real grenadine<\/li>\n<\/ul>\n<h1>Steps<\/h1>\n<p>Roasted Pepper<\/p>\n<ul>\n<li>Clean, de-seed and slice the Red Bell Pepper into 3\/4&#8243; strips.<\/li>\n<li>Roast at 400F until blistered, let cool.<\/li>\n<\/ul>\n<p>Puree<\/p>\n<ul>\n<li>In the food processor, combine all the ingredients (Roasted Pepper, toasted Walnuts, Salt, Cumin, Pepper Flakes, Lemon Juice, Olive Oil, Grenadine).<\/li>\n<li>Pulse, then puree until all the ingredients are combined and it reaches a texture you like.<\/li>\n<li>If it&#8217;s too soft, add some more Walnuts (or hold back some of the Olive Oil until you are sure).<\/li>\n<li>If it&#8217;s too thick, add more Olive Oil; or if taste demands, some Lemon Juice and\/or Grenadine.<\/li>\n<\/ul>\n<h1>Notes<\/h1>\n<ul>\n<li>Most recipes call for Pomegranate Molasses (store bought or homemade). But I always have plenty of high quality Grenadine to stock the bar (See Scofflaw Cocktail recipe) and I now prefer the flavor in the Muhammara. I have been known to reduce the Grenadine to thicken it up, but it seems an unnecessary effort.<\/li>\n<li>Most (all?) recipes call for some bread crumbs to thicken the dip. I have never found this necessary. (And without out the bread this is GF.)<\/li>\n<li>Note: you can char the unsliced Pepper on a flame of a gas stove.
